Instructions
Begin by preheating your oven to 200°C (400°F). This ensures a perfectly cooked dish from the start.
In a medium-sized baking dish, combine the halved cherry tomatoes and minced garlic. Drizzle 2 tablespoons of the olive oil over the mixture. Season generously with salt, black pepper, the dried oregano, and red pepper flakes if you prefer a bit of heat. Toss until all the ingredients are well-coated.
Make a cozy spot in the center of the baking dish for the feta cheese, placing it among the seasoned tomatoes. Drizzle the remaining 2 tablespoons of olive oil over the feta block, allowing it to soak in the flavors.
Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the feta turns a lovely golden color and the tomatoes become blistered and juicy.
While everything is baking, bring a large pot of salted water to a rolling boil. Add the pasta and cook according to package instructions until al dente. Drain the pasta and set it aside to allow excess water to evaporate.
Once the feta and tomatoes have baked to perfection, carefully remove the baking dish from the oven. Using a fork, gently mash the feta into the blistered tomatoes, mixing them together until you achieve a creamy sauce-like consistency.
Add the cooked pasta directly into the baking dish, tossing everything together until the pasta is thoroughly coated with the luscious feta and tomato sauce.
Serve the pasta hot, garnished with fresh basil leaves for an aromatic touch and offer grated Parmesan cheese on the side for those who desire an extra layer of flavor.
Notes
This dish pairs wonderfully with a crisp green salad or toasted garlic bread for a complete meal!
