Instructions
Preheat your oven to 400°F (200°C).
In a mixing bowl, combine the shredded chicken with the BBQ sauce and stir until coated.
On a baking sheet lined with parchment paper, lay out your flatbreads and brush with olive oil. Season with salt and pepper.
Spread ranch dressing over each flatbread, then add the BBQ chicken mixture, followed by mozzarella cheese, red bell pepper, red onion, and corn.
Bake for 10-12 minutes until the cheese is melted and the edges are golden brown.
Remove from the oven, garnish with chopped cilantro, slice into triangles, and serve warm.
Notes
Serve on a large wooden board for a rustic feel, and offer extra ranch dressing on the side for dipping.
