Instructions
Begin by preheating your grill or stovetop skillet over medium heat.
Drizzle the chicken breasts with olive oil, then season them with garlic powder, onion powder, salt, and pepper.
Cook the seasoned chicken on the grill or skillet for approximately 5-7 minutes per side until fully cooked.
Remove the chicken from heat and let it rest for about 5 minutes, then shred using two forks.
In a large mixing bowl, combine the shredded chicken with buffalo sauce and toss until coated.
Gently separate the lettuce leaves to prepare them for wraps.
Take a lettuce leaf and spoon a portion of the buffalo chicken mixture into the center.
Add shredded carrots and diced celery on top of the chicken, and sprinkle with blue cheese if desired.
Garnish with fresh cilantro or parsley before serving.
Notes
Serve with extra sauce for drizzling or dipping, and lime wedges on the side.
