Begin by preheating your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper to prevent sticking.
In a large skillet, heat the olive oil over medium heat. Add the thinly sliced onions and cook, stirring frequently, until they become soft and translucent, which should take about 10 minutes.
Once the onions are softened, reduce the heat to low. Continue to cook the onions for an additional 15-20 minutes, stirring occasionally, until they turn a deep golden brown and develop a caramelized flavor.
Incorporate the balsamic vinegar, fresh thyme leaves, and season generously with salt and pepper. Mix well, then remove the skillet from heat and allow the mixture to cool slightly.
On a lightly floured surface, roll out the puff pastry to form a rectangle (or keep it circular if you prefer a round tart) that will fit your baking sheet. Transfer the rolled pastry to the prepared baking sheet.
Using a sharp knife, lightly score a 1-inch border around the edges of the pastry. Be careful not to cut all the way through; this will create a beautiful crust when baked.
Evenly distribute the caramelized onion mixture within the scored border of the pastry. Sprinkle crumbled goat cheese over the top, followed by a drizzle of honey to add a touch of sweetness.
To enhance the color and finish of your tart, brush the edges of the pastry with the beaten egg wash.
Bake in the preheated oven for 25-30 minutes, or until the pastry is fully puffed up and has acquired a beautiful golden-brown color.
Once baked, remove the tart from the oven and allow it to cool for a few minutes before slicing it into portions.
