Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
Cut the tops off each bell pepper and remove the seeds and membranes.
In a large skillet over medium heat, add ground beef, chopped onion, and minced garlic. Sauté until the meat is browned and the onion is soft, about 5-7 minutes.
Drain excess fat and return to medium heat. Add diced tomatoes, Worcestershire sauce, smoked paprika, salt, and pepper. Cook for an additional 2-3 minutes.
Remove from heat and stir in half of the shredded cheddar cheese until melted.
Spoon the cheeseburger mixture into each bell pepper, packing it tightly.
Stand the stuffed peppers upright in the greased baking dish and sprinkle remaining cheddar cheese on top.
Cover with aluminum foil and bake for 25 minutes.
Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
Let the stuffed peppers sit for a few minutes before serving.
Serve hot with optional toppings like chopped pickles, shredded lettuce, ketchup, and mustard.
