Instructions
In a large pot of generously salted boiling water, cook the farfalle pasta according to the package instructions until it reaches al dente texture, typically about 10-12 minutes. Once cooked, drain the pasta in a colander, reserving about ½ cup of the starchy pasta water for later use. Set the drained pasta aside.
While the pasta is cooking, take the chicken breasts and season them thoroughly with salt, freshly cracked black pepper, and Italian seasoning. In a large skillet, heat the olive oil over medium heat. Carefully place the seasoned chicken breasts in the hot pan and cook for 6-7 minutes on each side, until the chicken is golden brown and reaches an internal temperature of 165°F (75°C). Once cooked, remove the chicken from the skillet and let it rest on a cutting board for a few minutes before slicing into thin strips.
Using the same skillet you cooked the chicken in, add the minced garlic and sauté for about 30 seconds until it becomes fragrant and starts to lightly brown. Gradually pour in the heavy cream, stirring constantly, and bring it to a gentle simmer over medium heat. Slowly mix in the grated Parmesan cheese, stirring until it melts smoothly into the sauce. If the sauce becomes too thick, gradually add reserved pasta water, a tablespoon at a time, until your desired creamy consistency is achieved.
Gently fold the cooked pasta and sliced chicken into the creamy sauce, ensuring everything is evenly coated. Add the halved cherry tomatoes and stir gently, allowing the residual heat to warm the tomatoes without cooking them further.
Plate generous servings of the creamy chicken pasta mixture, with each bowl adorned with fresh basil leaves for an attractive presentation and an added burst of aromatic flavor. Enjoy your delightful dish!
