Instructions
Prepare the Bread: Begin by using a Christmas tree-shaped cookie cutter to cut each slice of whole grain bread into tree shapes. You can create two tree shapes from each slice, resulting in a total of 16 festive tree shapes.
Make the Cream Cheese Spread: In a medium mixing bowl, thoroughly combine the softened cream cheese with the chopped dill until the mixture is creamy and well-blended.
Assemble the Base Layer: Take 8 of the tree shapes (these will serve as the base for your sandwiches) and generously spread a layer of the dill cream cheese mixture on one side of each shape.
Add Fillings: Layer the spinach leaves evenly on top of the cream cheese. Next, place the slices of cucumber, followed by the roasted red pepper strips, and finish with the sliced turkey or chicken on top of the veggies.
Top It Off: Spread a thin layer of pesto on the remaining 8 tree shapes (these will serve as the top layers). Carefully press these pesto-topped shapes down onto the assembled bases, with the cream cheese side facing the fillings, thus forming a complete sandwich.
Decorate: Arrange the completed sandwiches artfully on a serving platter. For a festive flair, sprinkle edible glitter or star-shaped sprinkles generously on top of each sandwich tree, making them sparkle like holiday ornaments.
Cut Edges (Optional): If you prefer a cleaner look, you can trim any uneven edges of the sandwiches with a sharp knife for an elegant presentation.
