Instructions
In a mixing bowl, combine the pumpkin puree, maple syrup, vanilla extract, pumpkin spice, and sea salt. Blend until smooth and creamy.
In a separate bowl, whip the chilled coconut cream until soft peaks form.
Fold the whipped coconut cream into the pumpkin mixture, maintaining airiness. Stir in chia seeds if using.
Taste the mixture and adjust sweetness with more maple syrup if desired.
Spoon the mousse into serving glasses or a bowl.
Cover and refrigerate for at least 1 hour to set.
Top with whipped coconut cream and crushed graham crackers or nuts before serving.
