Instructions
In a large mixing bowl, whisk together the eggs, heavy cream, whole milk, granulated sugar, vanilla extract, ground cinnamon, and a pinch of salt until well combined and smooth.
Arrange the thick slices of brioche in a shallow dish and pour the custard mixture evenly over the bread, ensuring each slice is generously coated. Allow to soak for at least 30 minutes, flipping halfway through.
Preheat your oven to 350°F (175°C).
Grease a baking dish or large skillet with butter to prevent sticking.
Once the bread has soaked, carefully place the slices into the prepared baking dish in a single layer and pour any leftover custard mixture over the top.
Sprinkle the brown sugar evenly across the soaked brioche slices to cover the surface.
Transfer the baking dish to the preheated oven and bake for approximately 25-30 minutes until puffed up and golden brown.
Use a kitchen torch to caramelize the brown sugar topping until golden and crispy, or place under the broiler for 1-2 minutes, watching closely.
