8 ounces mascarpone cheese (softened)

1 cup heavy whipping cream

1/2 cup powdered sugar

1 teaspoon pure vanilla extract

24 ladyfinger cookies

Dark chocolate shavings (for an elegant garnish)

Instructions
 

Begin by pouring the cooled brewed coffee into a shallow dish. Stir in 1 tablespoon of cocoa powder until well combined. Set this mixture aside to allow the flavors to meld.

    In a large mixing bowl, combine the softened mascarpone cheese, powdered sugar, and vanilla extract. Using a spatula, gently fold in the heavy whipping cream until the mixture is smooth and creamy with no lumps.

      Take each ladyfinger cookie and quickly dip it into the coffee mixture, ensuring they are soaked evenly but not left in the liquid long enough to become soggy.

        In a rectangular dish (approximately 8x8 inches), arrange half of the soaked ladyfingers in a single layer, covering the base completely.

          Carefully spread half of the mascarpone mixture over the ladyfingers, smoothing it out to ensure an even layer.

            Repeat the process with the remaining ladyfingers, soaking them in the coffee mixture again before layering them over the first mascarpone layer. Spread the rest of the mascarpone mixture on top, smoothing it out as well.

              Finish by smoothing the top layer and covering the dish tightly with plastic wrap. Refrigerate for at least 4 hours, but preferably overnight to allow the flavors to develop fully.

                Just before serving, liberally dust the top with cocoa powder and decorate with dark chocolate shavings for an elegant finish.
