Ingredients

3 ripe bananas

1 cup all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

1 teaspoon ground cinnamon

1 cup cold water (adjust as needed)

½ cup packed brown sugar

2 tablespoons unsalted butter

Cooking oil (for frying)

Optional: powdered sugar for dusting, chopped nuts (such as walnuts or pecans) for garnish

Instructions

Start by peeling the ripe bananas and slicing them diagonally into ½-inch thick pieces. Set these banana slices aside on a plate.

In a medium mixing bowl, combine the all-purpose flour, baking powder, salt, and ground cinnamon. Whisk the dry ingredients together until fully integrated.

Gradually pour the cold water into the flour mixture, stirring constantly until the batter is smooth and free of lumps. The consistency should be thick enough to cling to the back of a spoon but not so thick that it won’t flow. Adjust the water or flour if necessary to achieve the right texture.

In a large frying pan, heat approximately 1 inch of cooking oil over medium heat until it shimmers.

Once the oil is hot, dip each banana slice into the batter, making sure it is completely enveloped. Carefully place the coated slices into the hot oil, working in batches to avoid overcrowding the pan.

Fry the banana slices for about 2-3 minutes on each side until they turn golden brown and crispy. Once finished, use a slotted spoon to transfer them to a plate lined with paper towels to drain any excess oil.

Meanwhile, in a small saucepan, melt the unsalted butter over low heat. Add the packed brown sugar and stir until it combines and becomes bubbly and syrupy, which should take about 2 minutes.

On a serving plate, arrange the crispy fried bananas and generously drizzle them with the warm brown sugar sauce while they are still hot.

If desired, give your dish a festive touch by dusting the bananas with powdered sugar and sprinkling chopped nuts over the top for an added crunch and flavor enhancement.
