Instructions
In a large mixing bowl, combine the crushed green mint cookies with the softened cream cheese. Mix until smooth and even.
Add the peppermint extract and green food coloring if desired. Stir until unified in color and flavor.
Cover the bowl and refrigerate for approximately 30 minutes to firm up the mixture.
Use a small cookie scoop or your hands to grab portions of the mixture, roll into 1-inch balls, and place on a lined baking sheet.
In a microwave-safe bowl, melt the white chocolate chips in 30-second intervals, stirring until glossy.
Dip each truffle into the melted white chocolate, allowing excess to drip off before placing back on the baking sheet.
Sprinkle red and green decorations on top before the chocolate sets, and add crushed mini candy cane pieces for garnish.
Allow the truffles to set at room temperature or refrigerate for quicker results.
