Instructions
In a large mixing bowl, use an electric mixer to beat the egg yolks and granulated sugar together on medium speed until the mixture is pale, fluffy, and almost triples in volume. This should take about 5 minutes.
Gently fold the mascarpone cheese and vanilla extract into the egg yolk mixture using a spatula, mixing until completely smooth and well combined.
In a separate bowl, whip the heavy cream using a mixer on high speed until stiff peaks form. Carefully fold the whipped cream into the mascarpone and egg yolk mixture in three additions, ensuring everything is fully incorporated without deflating the cream.
In another clean bowl, whisk the egg whites on high speed until soft peaks form. Gently fold the whipped egg whites into the mascarpone cream mixture in two additions, being careful not to lose the volume.
Take each ladyfinger and quickly dip it into the cooled coffee, ensuring to soak each side for just a second—do not let them become soggy.
Arrange half of the soaked ladyfingers in a single layer at the bottom of a 9x9-inch baking dish.
Spread half of the mascarpone cream mixture evenly over the layer of ladyfingers, smoothing it out with a spatula.
Repeat by adding another layer of the soaked ladyfingers on top, followed by the remaining mascarpone cream mixture, ensuring it is evenly spread.
Cover the baking dish with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld beautifully.
Before serving, dust the top generously with unsweetened cocoa powder to create a rich, chocolatey layer. Finish with dark chocolate shavings for an indulgent garnish.

Serve chilled portions elegantly in dessert glasses, layering some additional chocolate shavings on top for a refined look.
