Instructions
Begin by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.
In a large mixing bowl, combine the shredded cheddar cheese and almond flour. Make sure they are evenly mixed to create a cohesive base.
In a separate bowl, whisk together the eggs and softened cream cheese until the mixture is smooth and well-combined. Next, add the baking powder, garlic powder, onion powder, dried oregano, and a pinch of salt and black pepper. Whisk again until fully incorporated.
Carefully fold the egg and cream cheese mixture into the cheese and almond flour mixture. Stir gently until a sticky dough forms, ensuring that all ingredients are well-distributed.
Using a cookie scoop or a large spoon, drop equal-sized portions of the batter onto the prepared baking sheet, maintaining about 2 inches of space between each to allow for expansion while baking.
Place the baking sheet in the oven and bake for 12-15 minutes. The biscuits should be golden brown on top and firm to the touch when done.
Once baked, take the biscuits out of the oven and let them cool on the baking sheet for a few minutes. If desired, sprinkle with finely chopped fresh chives before serving for a burst of color and flavor.
