Instructions
Preheat your oven to 350°F (175°C). Prepare a muffin tin by lining it with paper liners or greasing it lightly with cooking spray.
In a large mixing bowl, mash the bananas until smooth. Stir in the melted coconut oil until well combined.
Add the granulated sugar, beaten egg, and pure vanilla extract to the banana mixture. Mix thoroughly until evenly integrated.
Sprinkle the baking soda, pinch of salt, and ground cinnamon over the mixture. Gently stir until well mixed in.
Gradually introduce the all-purpose flour, mixing just until the flour disappears—be cautious not to overmix.
Carefully fold in the semi-sweet chocolate chips and, if desired, the chopped nuts.
Fill each muffin cup about two-thirds full with the mixture.
Transfer the muffin tin to the preheated oven and bake for 18-20 minutes, or until a toothpick comes out clean.
Allow the muffins to cool in the tin for approximately 5 minutes before placing them on a wire rack to cool completely.
Notes
For an attractive finish, serve the muffins warm, lightly dusted with powdered sugar, or drizzle with melted chocolate.
