Begin by preheating your oven to 350°F (175°C). Line a baking dish with parchment paper.
In a large skillet, warm a splash of oil over medium heat. Add the diced onion and bell peppers, sautéing for about 5-7 minutes until tender. Incorporate the minced garlic and cook for an additional minute. Remove from heat and set aside to cool slightly.
In a spacious mixing bowl, combine the ground beef and ground turkey. Add the cooled sautéed vegetables, breadcrumbs, eggs, Worcestershire sauce, soy sauce, dried oregano, salt, and pepper. Gently mix until just combined.
Carefully fold in the shredded provolone cheese into the meat mixture, reserving a handful for topping.
Shape the meat mixture into a loaf form and place it onto the lined baking dish. Spread the ketchup over the top and sprinkle the reserved cheese on top.
Place the baking dish in the preheated oven and bake for 60-75 minutes, or until the meatloaf reaches an internal temperature of 165°F (74°C).
Once cooked, carefully remove the meatloaf from the oven and allow it to rest for about 10 minutes before slicing.
