Instructions
In a food processor, add the entire package of Pumpkin Spice Oreo cookies. Pulse them until they are finely crushed into crumbs resembling sand.
In a large mixing bowl, combine the crushed Oreo crumbs with the softened cream cheese and vanilla extract. Mix until you achieve a uniform dough-like consistency.
Cover the bowl tightly with plastic wrap and refrigerate the mixture for approximately 30 minutes.
Scoop about a tablespoon of the mixture and roll it between your palms to form a ball (approximately 1 inch in diameter). Place the rolled truffles onto a parchment-lined baking sheet.
In a microwave-safe bowl, combine the white chocolate chips with the coconut oil (if using). Microwave in 30-second intervals, stirring well until melted and smooth.
Using a fork, dip each truffle into the melted white chocolate, ensuring it is fully coated. Tap the fork on the side of the bowl to remove excess chocolate.
Before the chocolate coating sets, sprinkle a small amount of ground cinnamon, nutmeg, or crushed nuts on top of each truffle.
Return the baking sheet of truffles to the refrigerator for at least 30 minutes to allow the chocolate coating to harden completely.
Notes
Arrange the truffles on a decorative platter and drizzle with additional melted white chocolate for a beautiful finish.
