Begin by placing your honey and Dijon mustard in a medium-sized mixing bowl. Use a whisk to blend them together until the mixture is smooth and well combined.
Next, pour in the apple cider vinegar and continue whisking until it is fully mixed into the dressing.
Gradually drizzle in the olive oil while whisking continuously to emulsify the dressing.
If the dressing is too thick, add in the optional tablespoon of water, mixing thoroughly until you reach your preferred consistency.
Season the dressing with salt and freshly cracked black pepper. Taste and adjust the flavors as needed.
Transfer the finished dressing to an airtight container and store it in the refrigerator for up to one week.
